Ystävänpäivä (ruisnappi with goat cheese cream and fruits)

14 de febrero. Horror. El año pasado ya os conté de mi aversión hacia esta fecha y, con la emoción del momento de apología antivalentinesca, me olvidé de comentaros que el 14 de febrero se celebra de otra forma en Cardamomoland.

Hoy en Cardamomoland es el día de la amistad (y también del amor, por eso de que los amantes antes que todo son amigos... ¡ja!). Es el Ystävänpäivä (ystävä: amigo, -n-: partícula de posesivo – claro amiguetes, si eso de que el finés es uno de los idiomas más difíciles del mundo no es por capricho – y päivä: día). Y se celebra diciendo mucho “hyvää ystävänpäivää” y enviando tarjetitas de felicitación a todo quisqui. Entre parejas también se celebra el San Valentín puro... y duro, pero en eso no merece la pena que me extienda porque ya sabéis todos como va y de qué color es.

Este año la receta del 14 de febrero no va a ser tan fétida. Lleva queso de cabra, pero va rebajado. Es una receta para compartir con amigos así que al final me voy a dejar llevar por el momento...

 Ruisnappi con crema de queso de cabra y frutas


Ingredientes (para 22 – 24 ruisnappi):


1 paquete de ruisnappi o ruislastu
150 grs. de rulo de queso de cabra
150 grs. de crème fraîche
Frutas y frutos secos al gusto: uvas, granadas, mandarinas, arándanos, fresas, frambuesas, nueces, piñones...


Modus operandi:


1. Machaca el queso de cabra en un bol ayudándote con un tenedor. Agrega la crème fraîche y mezcla hasta que no queden grumos. Vierte la crema de queso en una manga pastelera y déjala enfriar unas horas en el frigorífico (la manga pastelera no es imprescindible pero facilita mucho el trabajo).

2. Coloca un poco de crema encima de cada ruisnappi (si no has usado la manga hazlo con una cuchara), y termina rematando con frutas y frutos secos de tu elección.


*Los ruisnappi o ruislastu son unos pequeños panes de centeno crujientes muy populares en Cardamomoland. Por su forma un poco cóncava dan mucho juego para crear recetas de este tipo, utilizando rellenos cremosos y acompañando con frutas, frutos secos, pescados ahumados...

Feb. 14th. Horror. Last year I already told you about my aversion to this day and, with the excitement of the anti-valentine moment, I forgot to tell you that Feb. 14th is celebrated in a different way in Cardamomland.

Today is the Friendship Day in Cardamomland (also the Day of Love, because lovers are friends and bla bla bla). It's called Ystävänpäivä (ystävä: friend, -n-: possessive particle  - yes, my friends, Finnish is one of the hardest languages in the world for a reason – and päivä: day), and it's celebrated saying “hyvää ystävänpäivää” all the time and sending cards to everybody. Couples also celebrate the traditional St. Valentine's Day but there is no special differences with other countries so it's not worth to mention.

This year the recipe of Feb. 14th is not gonna be as smelly as last year. There's goat cheese in the list of ingredients but it's not that bad. It's a recipe to share with friends, so I'll go with the flow for a while...

Ruisnappi with goat cheese cream and fruits


Ingredients (makes 22 – 24 ruisnappi):


1 packet of ruisnappi or ruislastu
150 g goat cheese
150 g crème fraîche
Fruits and nuts of your choice: grapes, pomegranates, tangerines, berries, walnuts, pine nuts...


Modus operandi:


1. Mash the goat cheese with a fork in a bowl. Add the crème fraîche and mix until there is no lumps left. Pour this cheese cream in a piping bag and let it stand in the fridge for some hours (the piping bag is not indispensable but it's really helpful).

2. Put some cheese cream on each ruisnappi (if you didn't use the piping bag, do it with a spoon), and finish with some fruits and nuts on top.


*The ruisnappi or ruislastu are small crunchy rye breads (snacks) very popular in Cardamomland. Their little bit concave surface allows a lot of combinations like this one, using creamy fillings and fruits, nuts, smoked fish...

Desmontando la enfermería de campaña (näkkileipä)

He hecho una pausa como enfermera a tiempo parcial para traeros una receta finlandesa, que ya tocaba. No sé si es la más fácil que he publicado en el blog, pero os aseguro que se hace en un abrir y cerrar de ojos y un abrir y cerrar de puerta de horno. El näkkileipä es el crispbread finlandés, son tortas o barritas de pan de centeno muy finas, crujientes y con infinidad de posibilidades. Se pueden untar con mantequilla o queso crema, prepararlas como una tosta con salmón ahumado y crème fraîche, queso y tomate, meetvursti y pepinillos... libre albedrío. Nuestra opción más recurrente es con mantequilla y escamas de sal, dadle una oportunidad, es sorprendente.

Hay cientos de recetas de näkkileipä, con más harina de centeno, con menos, con harina integral, con semillas de hinojo, sésamo, comino, más finos, más gruesos... Ésta es la mía, muy finos y con pipas de girasol.

Por cierto, muchas gracias a todos los que os interesasteis por la recuperación de Herra K, gracias por todos los comentarios y el apoyo, sois geniales. Ésta va por vosotros.

Näkkileipä


Ingredientes (para 12 unidades):

100 grs de harina de centeno
70 grs de harina de trigo
20 grs de pipas de girasol peladas (sin sal)
1 dl de agua
1 cucharada de mantequilla derretida
Una pizca de sal


Modus operandi:

1. Precalienta el horno a 220 C.

2. Mezcla todos los ingredientes en un bol y amasa con las manos hasta conseguir una bola de masa compacta.

3. Divide la masa en 12 bolas pequeñas. Espolvorea con harina la superficie de trabajo y estira cada bola todo lo que puedas con un rodillo de amasar. No te preocupes por la forma, cuanto más feas, más auténticas parecerán.

4. Coloca los näkkileipä en dos bandejas de horno preparadas con papel vegetal, 6 en cada una.

5. Hornea durante 8 – 10 minutos o hasta que estén dorados.

*Si prefieres hacer los näkkileipä un poco más gruesos, pínchalos con un tenedor antes de hornearlos.

Today I've had a little break as part-time nurse to bring you a Finnish recipe. Yes, finally. I don't know if this is the easiest recipe I've ever published in the blog, but be sure you can do this in the blink of an eye. The näkkileipä is the Finnish crispbread, a very flat kinda-cracker bread, made from rye flour mostly, crunchy and versatile. You can spread butter or cream cheese on them, or prepare them with smoked salmon and crème fraîche, or cheese and tomatoes, or meetvursti and pickles, or... free will. We usually eat them with butter and salt flakes, give it a try, it's surprisingly good.

There are hundreds of different näkkileipä recipes, with more or less rye flour, with wholewheat flour, with fennel or sesame seeds, with cumin, thinner or thicker... This is my own, very thin and with sunflower seeds.

By the way, thank you very much to all of you who sent all those good wishes for Herra K, thanks for all the comments and the support, you are simply great. This one is for you. 




Näkkileipä


Ingredients (makes 12):

100 g rye flour
70 g plain wheat flour
20 g unsalted shelled sunflower seeds
1 dl water
1 tbsp melted butter
A pinch of salt


Modus operandi:

1. Preheat the oven to 220 C.

2. Mix all the ingredients in a bowl and knead with your hands until you get a solid ball dough.

3. Divide the dough in 12 small balls. Dust your working surface with some flour and roll each ball out until very thin, using a rolling pin. Don't worry about the shape; the ugliest will be the most genuine.

4. Place the näkkileipä in two baking trays prepared with baking paper (6 in each one).

5. Bake for 8 – 10 minutes or until golden brown.

*If you prefer to make thicker näkkileipä, poke holes with a fork all over the surface of each näkkileipä before baking.

Amazon y la tarta de arándanos con centeno (Blueberry tart with rye)

Si Google es Dios, Amazon no puede ser otra cosa que el diablo. Os hace sufrir (a ti y a tu tarjeta) y os tienta con un filtro llamado Free Super Saver Shipping. A todos los tontos les da por algo, y a esta tonta que escribe ya hace un tiempo le dio por los libros de cocina. Y Amazon los tiene casi todos, y si no, te dice donde conseguirlos.

Amazon es la perdición.

Asumido este punto, decidí hacerme una lista de deseos en la web, con el único fin (ejem…) de tener mis prioridades ordenaditas y comprarme algo de vez en cuando. Pero la información es poder, y un individuo ciudadano finlandés al que llamaremos Herra K. de ahora en adelante, aprovechó esa inagotable fuente de conocimiento y me compró el número 1 del ranking para mi cumpleaños.

Ahora solo tengo que decir que si Amazon es la perdición, el libro Nordic Bakery Cookbook de Miisa Mink es la autodestrucción total.

Y para demostraros que no miento, ahí va la típica tarta de arándanos de los países del norte (mustikkapiirakka), recién salida de la página 111 de este libro.

Tarta de arándanos / Blueberry tart / Mustikkapiirakka


Ingredientes:

100 grs. de mantequilla sin sal en pomada

80 grs. de azúcar

1 huevo batido

100 grs. de harina de trigo

60 grs. de harina de centeno

1 cucharadita de levadura química

Para el relleno:

100 grs. de crème fraîche

150 ml. de nata agria

1 huevo batido

40 grs. de azúcar

1 cucharadita de esencia de vainilla

250 grs. de arándanos azules

Modus operandi:

1. Precalienta el horno a 200 C.

2. Pon la mantequilla y el azúcar en un bol y bate hasta que estén bien integrados. Añade el huevo poco a poco, mezclando bien. Agrega los dos tipos de harina y la levadura y sigue mezclando hasta que se forme la masa.

3. Coloca la masa en un molde de tarta enmantequillado y dale forma con las manos, cubriendo uniformemente toda la base y los laterales del mismo.

4. Para preparar el relleno, pon la crème fraîche, la nata agria, el huevo, el azúcar y la esencia de vainilla en un bol y mezcla bien. Vierte el relleno sobre la masa y coloca los arándanos encima.

5. Hornea alrededor de 25 minutos, o hasta que el relleno esté listo y la masa bastante dorada.

Nordic Bakery Cookbook

If Google is God, Amazon can´t be anything else but the devil. It makes you both suffer (you and your credit card) and it tempts you with a magic potion called “Free Super Saver Shipping”. Every stupid has his own obsessions, and this stupid who writes decided some time ago that her obsession would be cooking books. And Amazon has them (almost) all, and if not, it tells you where to get them.

Amazon is the downfall.

Absolutely conscious of this, I decided to get myself an Amazon wish list, with the only purpose (ehem…) of having a list with my priorities to check and get something from time to time. But info is power, and a Finnish citizen who will be called Herra K. from now on, used that never ending source of information and bought the number 1 of the ranking for my birthday.

Now I only can say that if Amazon is the downfall, the Nordic Bakery Cookbook by Miisa Mink can’t be anything else but the total self-destruction.

And to show you I’m not lying, here you have the typical blueberry tart from northern countries (mustikkapiirakka), just taken from the page 111 of this book.

Nordic Bakery Cookbook


Ingredients:

100 g. unsalted butter, softened at room temperature

85 g. caster sugar

1 egg, lightly beaten

100 g. plain flour

60 g. wholemeal rye flour

1 teaspoon baking powder

Filling:

100 g. crème fraîche

150 ml soured cream

1 egg, lightly beaten

40 g. caster sugar

1 teaspoon vanilla extract

250 g. blueberries

Modus operandi:

1. Preheat the oven to 200 C.

2. Put the butter and sugar in a mixing bowl and beat until well mixed. Gradually add the egg, mixing well. Tip in the flours and baking powder and and mix again until a dough has formed.

3. Transfer the dough to a greased tart tin and push and press it into the tin until the base and the sides are evenly covered with a neat layer of dough.

4. To make the filling, put the crème fraîche, soured cream, egg, sugar and vanilla extract in a mixing bowl and mix well. Pour into the pastry case, then scatter the blueberries into the tart.

5. Bake in the preheated oven for 25 minutes, or until the filling has set and the pastry is golden brown.
