Galletas multiusos (piparit with roquefort, apple and pine nuts)

Ya os comenté hace un par de entradas que este año me ha dado por buscarle usos diferentes a las galletas de jengibre finlandesas (piparit) y hace unos días una compañera de trabajo me dio una idea fantástica. Me dijo que aquí a la gente le gusta comerlas con sinihomejuusto (queso azul) y pensé que si a los finlandeses les va con queso fuerte, yo les iba a calzar un roquefort como mandan los cánones y un par de cositas más. El resultado es éste: un aperitivo sorprendente para quedar como dios en las próximas navidades (¡o cuando tercie!).

Piparit with Roquefort and apples




Piparit con roquefort, manzana y piñones


Ingredientes (para 8 galletas):

8 piparit (galletas de jengibre)
2 manzanas Granny Smith (o las que más te gusten)
50 grs de roquefort
1 cucharada de piñones
1 cucharadita de mantequilla
Miel
Aceite de oliva virgen extra


Modus operandi:

1. Tuesta los piñones en una sartén pequeña con unas gotas de aceite de oliva. Reserva.

2. Pela las manzanas y pícalas en trocitos. En la misma sartén, calienta una cucharadita de mantequilla y fríe las manzanas en ella hasta que estén doradas y tiernas.

3. Coloca las galletas en un plato, añade una cucharada de manzana sobre cada una, unos pedacitos de roquefort, un hilo de miel y unos piñones. Sirve inmediatamente.


Fácil, ¿no? Pues hyvää ruokahalua!

Multipurpose cookies


I told you couple posts ago that now I'm trying to find different uses for the Finnish gingerbread cookies (piparit) and some days ago one of my co-workers gave me a great idea. She told me that Finns like to eat piparit with sinihomejuusto (blue cheese) and I thought if they like it that way I would serve them with some good roquefort and a couple of ingredients more. The result is this: a surprising appetizer, perfect for this Christmas (or whenever!).

Piparit with Roquefort and apples



Piparit with roquefort, apple and pine nuts


Ingredients (makes 8):

8 piparit (gingerbread cookies)
2 Granny Smith apples (or your favorite ones)
50 g roquefort cheese
1 tbsp pine nuts
1 tsp butter
Honey
Extra virgin olive oil


Modus operandi:

1. Toast the pine nuts with some drops of olive oil in a small frying pan. Reserve.

2. Peel the apples and cut them into little dices. In the same frying pan, heat a teaspoon of butter and add the apple dices. Fry them until golden and tender.

3. Place the cookies on a dish, add a tablespoon of apple dices on top of each cookie, some roquefort bits, a couple drops of honey and some pine nuts. Serve immediately.


Easy, huh? Hyvää ruokahalua!

Reconciliación (rahkaomenapiirakka)

Ya es hora de ir haciendo las paces. Y para eso nada mejor que un clasicazo de la repostería finlandesa: la tarta de manzana. Pero ojito, esta no es una tarta de manzana cualquiera. Lleva en su interior una crema de quark con zumo de limón que está para chillarle. Recién hecha está buenísima pero al día siguiente, cuando el limón y la crema se han asentado, está para hacerle la ola.

Pero antes un poquito de análisis morfológico: rahka (quark) – omena (manzana) – piirakka (tarta). Ahí es nada. Vamos que nos vamos.




Rahkaomenapiirakka

Ingredientes:

Para la base:

100 grs. de mantequilla en pomada

80 grs. de azúcar

1 huevo

160 grs. de harina de trigo

8 grs. de levadura química

Para el relleno:

250 grs. de queso quark

2 dl. de nata 35%

2 huevos

150 grs. de azúcar blanquilla

½ cucharadita de azúcar avainillado

El zumo de medio limón

Para la cobertura:

2 manzanas (sin son reinetas mejor)

Azúcar blanquilla

Canela

Modus operandi:

1. Precalienta el horno a 180 C.

2. Pon la mantequilla y el azúcar en un bol y bate hasta que estén bien integrados. Añade el huevo y mezcla bien. Agrega la harina y la levadura y sigue mezclando hasta que se forme una masa.

3. Coloca la masa en un molde de tarta engrasado y dale forma con las manos, cubriendo uniformemente toda la base y los laterales.

4. Mezcla todos los ingredientes del relleno con unas varillas y vierte esta crema sobre la base.

5. Corta las manzanas en láminas finitas y colócalas sobre la crema. Espolvorea con azúcar y canela.

6. Hornea durante 35 – 40 minutos.

*Para rematar la faena, puedes servirla con una bola de helado o con una cremita de vainilla... ñam ñam ñam!

Reconciliation (rahkaomenapiirakka)

It’s time for reconciliation. And nothing better for that than this classic of Finnish bakery: the apple pie. But keep your eyes open, this is not a common apple pie. It has a luscious quark cream with lemon juice inside. Delicious. It’s great just baked but after one day… OMG!

And now a little bit of analysis of morphology: rahka (quark) – omena (apple) – piirakka (pie). Let’s go!

Rahkaomenapiirakka

Ingredients:

100 g butter, softened at room temperature

80 g caster sugar

1 egg

160 g plain flour

8 g baking powder

For the filling:

250 g quark

2 dl cream 35%

2 eggs

150 g caster sugar

½ tsp vanilla sugar

Juice of half a lemon

For the top:

2 apples

Caster sugar

Cinnamon 




Modus operandi:

1. Preheat the oven to 180 C.

2. Put the sugar and the butter in a bowl and whisk until well mixed. Add the egg and mix, then tip in the flour and the baking powder and mix again.

3. Place the dough on a greased pie tin and press with your hands until the base and the sides are evenly covered.

4. Mix all the ingredients of the filling with a whisk and pour over the dough.

5. Slice the apples finely and place them over the cream. Dust with sugar and cinnamon.

6. Bake for around 35 – 40 minutes.

*To make it even more delicious, you can serve it with ice cream or some vanilla cream… yummy!

Síndrome post-vacacional (endive and blue cheese salad)

Después de una semana y media me está costando todavía volver a la normalidad. No me termino de centrar con los horarios y estoy bastante perruna (y la casa sin fregar). Aún así, ayer saqué fuerzas de flaqueza (o algo así) y preparé esta recetilla fácil pero rica, dos adjetivos que no están nada mal para empezar una semana de este calibre.

Me queda pendiente lo de hacer las paces con el país. Yo no sé si habrá sido un mal karma o qué, pero después de postear los trapos sucios del aeropuerto ha empezado a llover y la nieve se ha convertido en unas placas de hielo fantásticas que me hacen llegar al trabajo casi patinando. Un día de estos me la pego. Y será una leche apoteósica. Al tiempo.
 

 
 
Ensalada de envidias con queso azul

Ingredientes (para dos personas):

1 endivia grandota

1 manzana (a ser posible Red Delicious, como la de Blancanieves)

1 ramita de apio

1 puñadito de nueces

100 ml. de nata para cocinar (12-15%)

75 grs. de queso azul

Modus operandi:

1. Trocea el queso y bátelo ligeramente con la nata (en 3 ó 4 golpes de batidora estará listo).

2. Pica el apio finamente, trocea las nueces a tu gusto y corta la manzana en dados (sin pelar).

3. Mézclalo todo con la salsa de queso azul y acompaña con las hojas de endivia haciendo barquitas.
 
*Puedes añadir también algunas hojas de endivia troceadas a la mezcla.

Post-holiday syndrome

After a week and half I’m still having some troubles to go back to normality. I still don’t have the timetables under control and I’m feeling quite lazy all the time. Anyway, yesterday I encouraged myself (or something like that) and I prepared this recipe, easy but tasty, two very appropriate adjectives to start this kind of week.

For another post I leave my pending reconciliation with this country. I don’t know if it was a bad karma or what, but after posting about the mess of the airports, it has started to rain and the snow has turned into some great black ice that makes me go to work almost ice-skating. One day I’ll have an accident. And it will be tremendous. You’ll see.

Endive and blue cheese salad


Ingredients (serves 2):

1 big endive

1 apple (preferably Red Delicious, as Snow White’s)

1 celery stick

1 handful of walnuts

100 ml cream (12-15%)

75 g blue cheese

Modus operandi:

1. Dice the cheese and whisk it lightly with the cream (in some seconds it will be ready).

2. Chop the celery very finely, cut the walnuts and dice the apple (keep the skin).

3. Mix everything with the blue cheese dressing and serve with the endive leaves (you can use them as spoon!).
 
*You can add also some chopped endive leaves to the mix.

Lunes (Pork loin with apple sauce)

Hoy estoy de lunes. Sí, parece una obviedad como un piano pero desde que vivo en Finlandia para mí todos los días son sábados. Hoy, sin embargo, me he levantado de lunes y eso, en el fondo, me alegra. La razón no es otra que un fin de semana movidito que culminó ayer con una visita a Nuuksio, un parque natural del sur de Finlandia, para hacer un poquito de senderismo.

Ayer todas las webs del mundo mundial garantizaban que no llovería, así que cogimos nuestras chaquetillas, el GPS de Nokia y procedimos a perdernos durante dos horas por esas carreteras finlandesas no recomendables para claustrofóbicos. Porque aquí es salirte de una autovía y meterte en un tajo de árboles infernal. Que si antes una ardilla podía cruzar la Península Ibérica saltando de árbol en árbol, aquí se columpian en tu cara y te hacen la peseta (peineta). Total, 2 horas y 10 minutos para recorrer 46 km. Eso es optimizar el tiempo y lo demás son tonterías.

Así que llegamos, hicimos la ruta azul, sacamos unas fotillos para todos vosotros y nos volvimos. Y sí, a la vuelta nos perdimos otra vez, intentando buscar un sitio donde comer algo un domingo a las 6 de la tarde (que no es tarea fácil pues resulta que ahora les ha dado por decir que la gente tiene tiempo libre y lo de estar esclavizado un domingo hasta medianoche ya no se lleva). 




Resumiendo, y nada mejor para eso que la frase con la que he comenzado, hoy estoy de lunes y no tengo ganas de historias. Así que aquí va una receta, fácil fácil pero rica rica, para llevar el lunes con dignidad.

Y por cierto, gracias a Nokia por hacerme desarrollar una paciencia infinita.


Aquí Don Lomo muy bien acompañado...


Lomo de cerdo con salsa de manzanas

Ingredientes (para 4 personas):

600 – 700 grs. de cinta de lomo de cerdo, en una pieza

2 manzanas (las que más te gusten, no nos vamos a poner quisquillosos… ¡es lunes!)

1 cebolla

1 zanahoria pequeña

125 ml. de sidra o vino blanco

200 ml. de agua

Harina de trigo

Aceite de oliva virgen extra

Pimienta negra molida

Sal

Modus operandi:

1. Retira el exceso de grasa que tenga la carne y salpimenta al gusto. En este momento puedes aliñar la carne con alguna hierbecilla de tu preferencia (perejil, tomillo…). Enharina el lomo para que no pierda la forma cuando lo cocines.

2. Pon al fuego una olla donde quepa la pieza de lomo más o menos justita y cubre el fondo con aceite de oliva. Marca bien el lomo unos minutos, sácalo de la olla y resérvalo. Añade la cebolla picada sin mucho esmero y ponla a pochar con un poquito de sal para que sude. Lava las manzanas y trocéalas con la piel, pela y pica la zanahoria y añádelo todo a la olla.

3. Introduce de nuevo el lomo en la olla, añade la sidra o el vino y el agua, un poquito de sal y pimienta y déjalo cocinar tapado todo junto durante 30 minutos. A media cocción dale la vuelta al lomo.

4. Una vez cocinado, saca el lomo y córtalo en filetes finitos. Con una batidora de mano, tritura el resto del contenido de la olla para obtener la salsa de manzanas.

5. Sirve los filetes con la salsa de manzanas acompañados por unas patatas o arroz y una buena barra de pan para hacer barquitos. Y de postre una siesta de lunes.

Fácil y digno, ¿o no?

Monday

Today I have that Monday feeling. Yep, it seems obvious but since I live in Finland every day is Saturday for me. However, today I woke up with that Monday feeling and somehow I like it. The reason is a busy weekend that ended yesterday with a visit to the National Park of Nuuksio, in the south of Finland, for a little hiking.

Yesterday all forecast webs in the world said that it wouldn’t rain so we took our jackets, the Nokia GPS and we proceeded to get ourselves lost in those claustrophobic Finnish roads. Because when you leave the motorway, be ready to get into an infernal cut of trees. So 2 hours and 10 minutes to drive 46 km. That’s a good time optimization.

So we reached the park, walked the blue route, took some pictures for you and came back. And yes, we got lost again on the way back, trying to find a place where to eat something on Sunday at 6 pm (not easy at all, it seems they think people have the right to enjoy some free time, so working on Sunday until midnight is not one of their plans - some differences more between North and South).

To sum up, I have that Monday feeling and I don’t want complications. Here we go with a very very easy but very very tasty recipe, to start the week with dignity.

And by the way, thanks Nokia for making me develop an endless patience.

Pork loin with apple sauce

Ingredients (serves 4):

600 – 700 g. pork loin, in one piece

2 apples (whatever you like the most, we are not going to complain… it’s Monday!)

1 onion

1 small carrot

125 ml. cider or white wine

200 ml. water

Plain flour

Extra virgin olive oil

Grounded black pepper

Salt

Modus operandi:

1. Remove the fat of the meat with a sharp knife and season with salt and pepper. In this moment you can add some herbs you like (parsley, thyme…). Coat the loin with flour so it keeps its shape while you cook it.

2. Take a medium size pot and cover the bottom with olive oil. Put the loin inside and sear at high temperature for couple minutes, then take it away and reserve. Add the chopped onion and let it cook with a pinch of salt. Wash the apples, cut them into pieces keeping the skin, peel and chop the carrot and add everything to the pot.

3. Put the loin again into the pot, add the cider or wine and the water, a bit of salt and pepper and let it cook covered for around 30 minutes. Turn the loin upside down after 15 minutes.

4. Take the loin from the pot and finely fillet it. With a hand blender, puree the rest of the ingredients to get the apple sauce.

5. Serve the fillets with the apple sauce and some potatoes or rice for garnish (and some good bread to enjoy the sauce!) I recommend a nice Monday siesta for dessert.

Easy and decent, isn’t it?
