Paréntesis saludable (oat vegetables wok with Arabian skewers)

Haciendo un paréntesis de recetas navideñas, que tienen por costumbre ser muy amables con nuestro espíritu pero con consecuencias bastante menos agradables para nuestro cuerpo, hoy os traigo una receta rica y sana.

La siguiente, navidad otra vez.



Wok de avena y verduras con pinchos morunos

Ingredientes (para 2 personas):

120 grs. de avena

1 puerro

1 zanahoria

1 pimiento verde

½ calabacín

1 pechuga de pollo

½ cucharada de ras el hanout

Tomillo

Perejil

Pimienta negra

Sal

Aceite de olive virgen extra

Modus operandi:

1. Corta la pechuga en dados regulares y colócala en un bol con el ras el hanout, una pizca de sal y una cucharadita de aceite. Deja el pollo macerar una media hora y ensarta los trozos en palos de brocheta.

2. Cuece la avena siguiendo las instrucciones del paquete (la que yo he utilizado necesita 8 minutos). Escurre, enfría y reserva.

3. Corta las verduras al gusto y pon el wok al fuego con una cucharadita de aceite. Cuando esté bien caliente añade el puerro y el pimiento, déjalos cocinar un par de minutos y entonces agrega la zanahoria y el calabacín. Aliña las verduras con tomillo, perejil, pimienta negra y un poquito de sal.

4. Por otro lado, cocina los pinchos en una plancha con una cucharadita de aceite.

5. Cuando las verduras estén crujientes, añade al wok la avena y dale un par de vueltas.

6. Sirve la avena con verduras con un par de pinchos de pollo por persona.

Healthy break

Christmas recipes are usually very kind with our soul but not so nice for our body. That’s why today I want to make a little break and I bring you a healthy but tasty recipe.

Oat vegetables wok with Arabian skewers

Ingredients (serves 2):

120 g oats

1 leek

1 carrot

1 green pepper

½ zucchini

1 chicken breast

½ tbsp. ras el hanout

Thyme

Parsley

Black pepper

Salt

Extra virgin olive oil

Modus operandi:

1. Dice the chicken breast and place it in a bowl with ras el hanout, a pinch of salt and a teaspoon of olive oil. Let the chicken marinate half an hour and then skewer it.

2. Cook the oats following the instructions of the packet (the one I’ve used needed 8 minutes). Drain, cool down with water and reserve.

3. Chop the vegetables and put the wok to heat with a teaspoon of olive oil. When hot, add the leek and the green pepper, let it cook couple minutes and then add the carrot and the zucchini. Season the vegetables with thyme, parsley, black pepper and a pinch of salt.

4. On the other side, grill the skewers with a teaspoon of olive oil.

5. When the vegetables are crunchy, add the oats to the wok and stir couple times.

6. Serve the oats and vegetables with a pair of skewers per person.
