Señoras y señores, hoy la cosa se
pone seria. Es el día de la declaración de la renta.
Sí, a pesar de que llevo viviendo ya
en Cardamomoland casi un año, hasta julio del año pasado estuve
trabajando en la madre patria y, como mandan los cánones, pagando
mis impuestos religiosamente. Así que me toca declarar y eso me ha
recordado que en algún momento este blog se iba a tener que poner
serio de verdad y os tendría que hablar de “la Vero”.
La Vero es la señora (bueno, realmente
es una entidad con sus oficinas y todo) que recauda los impuestos en
Cardamomoland. Para los sueco-parlantes se llama Skatt, pero yo soy
futura fino-parlante (o eso me gustaría) así que se queda con la
Vero.
Os podéis imaginar que con la fama que
tienen los países nórdicos de sangrar a sus inocentes ciudadanos a
base de tasas e impuestos, la primera vez que fui a encontrarme con
la Vero iba un pelín acojonadilla. Pensaba que iba yo a tener que
dejarme un riñón, un pulmón, el bazo y otras cosas innecesarias
para contribuir al estado de bienestar y bla bla bla. Así que
imagináos mi cara de “¿pero qué invento es este?” cuando
descubrí que tenía que pagar menos impuestos que en España.
Toma que toma y ole que ole.
Salí de mi visita con la Vero más
contenta que unas pascuas pero terriblemente confusa y me puse a
investigar el origen del mito. Y la cosa funciona así: las rentas
bajas pagan una ful de Estambul de impuestos, las rentas medias pagan
unos impuestos un poco más altos y las rentas altas... dios, mejor
no tengas una de esas. Así que es eres Senior Manager Aguachinai de
Nokia agárrate los machos, pero si eres un cocinerillo del tres al
cuarto como yo, puedes ir a ver a la Vero sin pestañear.
Resumiendo: en Cardamomoland hay una
gran clase media y poca clase alta, porque la Vero pone a todo el
mundo en su sitio.
La receta de hoy son unos rollitos de
pollo rellenos con un pesto diferente, sin mortero y sin piñones.
Vamos, lo que es un pesto con recortes. ¿He dicho recortes? Ups,
quería decir “ajustes”.
Rollitos de pollo con pesto de pipas
Ingredientes (para 2 personas):
1 pechuga de pollo
6 – 8 pimientos del piquillo
4 lonchas de queso (uno que funda
bien y no tenga un sabor muy fuerte - yo he usado gouda chevrette -)
Aceite de oliva virgen extra
Pimienta negra molida
Sal
Para el pesto:
20 grs de hojas de albahaca frescas
30 grs de pipas de girasol peladas (sin
sal)
30 grs de parmesano rallado
40 grs de aceite de oliva virgen extra
1 diente de ajo pequeño
Una pizca de sal
Modus operandi:
1. Precalienta el horno a 180 C.
2. Corta las pechugas de pollo en 4
filetes. Colócalos entre dos trozos de film de cocina y espálmalos
hasta dejarlos bien finos con un martillo para carne. Salpiméntalos
ligeramente (el pesto les aportará candela buena).
3. Coloca un par de pimientos del
piquillo y una loncha de queso sobre cada filete y enróllalos,
ayudándote para cerrarlos con unos palillos de dientes. Marca los
rollitos en una sartén con un chorrito de aceite de oliva.
4. Mientras tanto, tritura todos los
ingredientes del pesto juntos con ayuda de una trituradora o una
batidora de mano.
5. Coloca los rollitos en una fuente
para horno y cúbrelos con el pesto. Hornea durante 25 minutos.
*Puedes servir los rollitos con unas
patatas o arroz.
**Para lectores fuera de España: los
pimientos del piquillo se pueden sustituir por pimientos rojos
asados.
Ladies and gentlemen, today I bring you
a serious business. Today is the day of my Spanish tax declaration.
Yep, I've been living in Cardamomland
almost one year, but until July 2011 I was working in Spain and, as a
good girl I am, paying all my taxes. So now I have to make the
declaration and that reminded me that in some point this blog should
have a very serious moment when I would talk to you about “la Vero”
(“Vero” in Spanish is the nickname of the female name
“Verónica”).
La Vero is the lady (well, it's
actually an entity with offices and so on) that collects the taxes in
Cardamomland. For Swedish speakers it's Skatt, but I'm a future
Finnish speaker (or that's my wish) so for me it's la Vero.
Nordic countries are well known because
of bleeding their innocent citizens with taxes so, as you can
imagine, the first time I went to meet la Vero I was a bit scared. I
thought that I'd have to give one kidney, one lung, my spleen and
other unnecessary stuff to contribute to the welfare state and bla
bla bla so you can imagine my “WTF face” when I noticed I had to
pay less taxes than in Spain.
Ole.
So I finished my visit to la Vero in a
very good mood but terribly confused and I decided to investigate the
origins of the myth. And it works like this: people with small
salaries pay very few taxes, with medium salaries they pay a bit more
and with high salaries... oh Lord, you don't want to have one of
those. So if you are a Nokia Senior Manager Whatever get ready, but
if you are just a common cook like me, then you can go to visit la
Vero without pain.
To sum up: in Cardamomland there is a
big middle class and a small upper class, because la Vero does good
justice.
Today's recipe is some delicious
chicken rolls with a different pesto. No mortar, no pine nuts. A
pesto with budget cuts. Did I say budget cuts? Oops, I meant
“readjustment”.
Chicken rolls with sunflower seeds pesto
Ingredients (serves 2):
1 chicken breast
6 – 8 piquillo peppers
4 cheese slices (pick one easy to melt
with not very strong flavour – I've used gouda chevrette)
Extra virgin olive oil
Ground black pepper
Salt
For the pesto:
20 g fresh basil leaves
30 g unsalted shelled sunflower seeds
30 g grated parmesan
40 g extra virgin olive oil
1 small garlic clove
A pinch of salt
Modus operandi:
1. Preheat the oven to 180 C.
2. Cut the chicken breast into 4
fillets. Place them between two pieces of plastic wrap and hit them
with a meat tenderizer hammer until very thin. Season with some salt
and pepper (not much, pesto will add extra salt to the chicken).
3. Place a couple of piquillo peppers
and a slice of cheese on each fillet, roll them up and close them
using some toothpicks. Lightly fry the rolls in a frying pan with a
tablespoon of olive oil.
4. In the meanwhile, crush all the
ingredients of pesto together, using a food processor or a hand
blender.
5. Place the rolls in an oven proof
dish and cover them with pesto. Bake for around 25 minutes.
*You can serve the rolls with some
potatoes or rice.

roasted bell peppers instead of piquillo peppers.
