Vuelta definitiva. Andalucía – Parte 1 (strawberry salmorejo with basil, goat cheese and almonds)

Ahora sí. He vuelto, y las que parecían unas eternas vacaciones de verano han terminado. No debo quejarme, pero como es gratis, os diría que me hacen falta unas vacaciones para recuperarme de mis vacaciones, y no es broma. De acá para allá no he parado y tanto ha sido, que no me queda más remedio que contároslo por capítulos. Cinco, ni más ni menos: tres de España, uno de la República Checa y otro de Francia. Y todos ellos con receta, para no perder las buenas costumbres.

La primera parada fue Huelva. Mi señora madre alquiló un apartamento en la playita donde nos pegamos una semana familiar a la bartola: de la playa al chiringuito, del chiringuito a la siesta, de la siesta a la playa (bueno, un día fuimos a Doñana).

De este viaje saqué algunas conclusiones muy trascendentales:

1. Me gustaría vivir así 52 semanas al año.
2. Las gambas del Huelva son las mejores del mundo.
3. Comer en un chiringuito es como echar la Bonoloto... a veces ganas y muchas pierdes (y eso, teniendo en cuenta cómo se puede llegar a comer en España es muy, pero que muy triste). Si encima el plato que pides es paella, las posibilidades de perder se multiplican por 10.

Con este salmorejo inauguro esta serie de recetas para combatir la depresión post-vacacional. O algo así.




Salmorejo de fresas con albahaca, queso de cabra y almendras


Ingredientes (para 2 - 3 personas):

300 grs de tomates pera
200 grs de fresas
100 grs de pan del día anterior
100 ml de aceite de oliva virgen extra
5 hojas de albahaca fresca
1 diente de ajo pequeño
50 grs de queso de cabra tierno
10 almendras
Sal

Modus operandi:

1. Corta el pan en trozos medianos y colócalos en el vaso de la batidora. Pela los tomates y trocéalos. Añádelos al vaso junto con las fresas limpias y picadas, la albahaca, el ajo, el aceite y sal al gusto.

2. Pica las almendras en trozos grandes y fríelas con un poco de aceite en una sartén (cuidado, se queman rápidamente). Sácalas a un plato con papel absorbente, para que pierdan el exceso de aceite.

3. Tritura los ingredientes del vaso hasta obtener una crema fina. Deja la crema reposar en el frigorífico hasta que esté bien fría.

4. Sirve el salmorejo con el queso de cabra desmenuzado con los dedos, las almendras fritas y unas gotas de aceite de oliva (¡y mucho pan!).

Herra K in Matalascañas

Now it's true. I'm back, and the holidays that seemed to be eternal are finally over. I shouldn't complain, but it's free, so I'll tell you I need some more holidays to recover from my holidays (and I'm not kidding). Here and there, I haven't stopped and it has been so long that I have to divide the story to 5 episodes: three in Spain, one in Czech Republic and the last one in France. And all of them with a recipe, of course.

My first stop was in Huelva (Andalucía, Spain). My mom rented a holiday apartment where we enjoyed a family week of beach, “chiringuitos” (beach restaurants and bars) and siesta (ok, one day we went to Doñana, a National Park nearby).

From this trip I could reach some very transcendental conclusions:

1. I'd like to live like that 52 weeks per year.
2. The prawns from Huelva are the very best in the world.
3. Eating in a chiringuito is like playing lottery... sometimes you win and a lot of them you loose (and that, considering how rich the Spanish gastronomy is, is really really sad). If the dish you pick is paella, the possibilities of loosing are multiplied by 10.

The traditional salmorejo is an Andalusian cold tomato cream, usually served with a garnish of cured ham and boiled egg. This is my own version, the first recipe of this holiday series, ready to fight back the post-vacation blues (or something like that). 




Strawberry salmorejo with basil, goat cheese and almonds


Ingredients:

300 g plum tomatoes
200 g strawberries
100 g white bread from the previous day
100 ml extra virgin olive oil
5 leaves of fresh basil
1 small garlic clove
50 g soft goat cheese
10 almonds
Salt

Modus operandi:

1. Cut the bread into medium pieces and place them in the blender jar. Peel the tomatoes and chop them. Add them to the jar together with the clean and chopped strawberries, basil, oil and some salt.

2. Chop the almonds into big pieces and fry them in a frying pan with a bit of olive oil (be careful, they burn easily). Take them away and place them on a paper towel, to remove the extra oil.

3. Blend the ingredients of the jar until you get a smooth cream. Let it stand in the fridge until it's very cold.

4. Serve the cream with the cheese, crumbled with your fingers, the fried almonds and some olive oil drops (and a lot of bread to dip!).

Un par de batidos (milkshakes)

Hoy vengo a confesar que soy adicta a los batidos. A casi todos. Y menos mal que me gustan, porque es la única forma humana en la que puedo beberme un vaso de leche. Odio la leche más que a mi peor enemigo (pero menos que a las setas, por supuesto) pero con unas fresas, un plátano o unas frambuesas nos hacemos amigas inmediatamente.

Me da igual que sea verano o invierno para beberme un vasazo de batido fresquito, pero parece que ahora que por fin ha llegado el verano a Cardamomoland, pinta un poco más. Aquí os traigo dos propuestas que siempre me han gustado; el segundo es mi favorito por siempre jamás y el primero estaba en mi top ten antes de que los kiwis decidieran desaparecer completamente de mi vida. Los veo en el super tan bonitos, tan ordenaditos, tan caros... mi demonio interior me dice que me los lleve, que qué tontería es esa en mi cabeza, pero finalmente mi ángel me salva con un definitivo “¡¡¡alergia!!!”.

Batido de fresa y kiwi con helado de vainilla


Ingredientes (para 1 batido grandote):

4 fresas
1 kiwi
1 bola de helado de vainilla
200 ml de leche
1 cucharadita de azúcar

Modus operandi:

1. Tritura todos los ingredientes juntos y sirve inmediatamente. Puedes decorar el vaso con una rodaja de kiwi y una fresa.

*La cantidad de azúcar puede variar según la acidez del kiwi o de las fresas, puedes comenzar no poniendo azúcar (el helado ya aporta un poco) e ir añadiendo al gusto.


Batido de plátano con yogur griego y canela


Ingredientes (para 1 batido grandote):

1 plátano
200 ml de leche
100 grs de yogur griego
¼ cucharadita de canela
Chocolate negro

Modus operandi:

1. Coloca un par de onzas de chocolate negro en un plato de postre y fúndelas en el microondas durante unos segundos. Coloca el vaso del batido boca abajo sobre el plato para que el borde quede cubierto de chocolate fundido.

2. Tritura el resto de ingredientes juntos y sirve inmediatamente en el vaso con el borde de chocolate. Puedes decorar con un poquito de canela.

A couple of milkshakes


Today I must confess than I'm addicted to milkshakes. Pretty much to all of them. And thanks that I like them, because they are the only human way for me to drink a glass of milk. I hate milk more than I hate my worst enemy (but less than mushrooms, of course) but together with a couple of strawberries, a banana or some raspberries we become friends immediately.

I don't care if it's winter or summer to drink a huge and fresh milkshake but it seems it's a proper moment to post them now that the summer finally arrived to Cardamomland. So here I bring you two that I've always liked; the second one is my favorite forever and ever and the first one was in my top ten before the kiwis decided to leave me alone for good. I see them in the supermarket, so beautiful and expensive... my inner devil tells me that I should buy them, no stupidities, but finally my angel saves me sentencing: “allergy!!!”

Strawberry and kiwi milkshake with vanilla ice cream


Ingredients (makes 1 huge milkshake):

4 strawberries
1 kiwi
1 scoop vanilla ice cream
200 ml milk
1 tsp sugar

Modus operandi:

1. Blend all the ingredients together and serve immediately. You can decorate the glass with a slice of kiwi and a strawberry.

*The quantity of sugar might change depending on the sourness of the fruits, you can start with no sugar at all (ice cream already has some) and add some later.


Banana, Greek yogurt and cinnamon milkshake


Ingredients (makes 1 huge milkshake):

1 banana
200 ml milk
100 g Greek yogurt
¼ tsp cinnamon
Dark chocolate

Modus operandi:

1. Place a couple of chocolate squares in a dessert dish and melt it in the microwave for some seconds. Place the milkshake glass upside down on the dish so the rim gets covered by chocolate.

2. Blend the rest of ingredients together and serve immediately in the prepared glass. You can decorate with some cinnamon.

Onnea! (triple berry mascarpone cake)

“Onnea” significa felicidades en finés y es que el pastel de hoy tiene dedicatoria y es, probablemente, la más merecida de todas.

No sólo porque esa persona sea la razón de que yo viva en Cardamomoland o porque me aguante día y noche; también porque es una parte importante de este blog y quien me empujó (y os aseguro que la cabezonería finlandesa puede no tener límites) a comenzarlo.

En Finlandia es típico comer tarta de fresas con nata en las fiestas de cumpleaños, de un año a otro suelen ser muy parecidas, si no iguales, y a pesar de que están muy buenas me apetecía preparar algo diferente pero que no rompiera del todo con la tradición. Así que a las fresas las acompañé de arándanos y frambuesas, que en esta época hay a espuertas y están de vicio; a la nata de mascarpone y al bizcocho de cacao, que nunca es mala idea.

Tarta de tres frutos del bosque y mascarpone


Ingredientes (para 10 personas):

Para el bizcocho:

6 huevos
200 grs de azúcar
200 grs de harina de trigo
3 cucharadas de cacao en polvo
1 pizca de sal

Para el relleno y la cobertura:

500 ml de nata para montar
500 grs de mascarpone
2 cucharadas de azúcar glass
1 cucharada de esencia de vainilla
80 grs de fresas (y algunas más para decorar)
80 grs de frambuesas (y algunas más para decorar)
80 grs de arándanos azules (y algunos más para decorar)

Modus operandi:

1. Precalienta el horno a 180 C.

2. Bate los huevos con el azúcar en un bol hasta que doblen su volumen y estén esponjosos. A continuación añade poco a poco la harina, mezclada con el cacao y la sal, integrándola con movimientos envolventes.

3. Prepara dos bandejas de horno con papel vegetal y esparce la mitad de la masa en cada una, formando un cuadrado muy fino en cada una de ellas. Hornea durante 10 minutos. Saca los bizcochos del horno y déjalos templar. Retira con cuidado el papel vegetal y deja enfriar completamente.

4. Monta la nata en un bol grande. Cuando esté bien firme añade el mascarpone, el azúcar glass y la esencia de vainilla y vuelve a montar hasta que la mezcla esté firme de nuevo.

5. Separa 450 grs de esta mezcla y divídela en tres cuencos (150 grs cada uno). Agrega en uno los arándanos, en otro las fresas cortadas en trocitos y en otro las frambuesas (dependiendo el tamaño puedes dejarlas enteras o trocearas un poco con las manos). Mezcla bien el contenido de cada cuenco y reserva.

6. Corta las planchas de bizcocho en dos y coloca los cuatro rectángulos uno encima de otro. Iguala los laterales con un cuchillo.

7. Coloca la primera plancha en el plato de presentación. Añade la capa de arándanos y coloca la segunda plancha. Agrega la capa de frambuesas y de nuevo coloca otra plancha. Por último añade la capa de fresas y finaliza con la cuarta capa de bizcocho. Cubre la tarta con el resto de la mezcla de mascarpone e iguala los lados y la superficie ayudándote de una espátula grande.

8. Decora con fresas, frambuesas y arándanos y reserva un par de horas en el frigorífico antes de servir.

*Para no ensuciar el plato de presentación puedes colocar trozos de papel de aluminio entre el plato y la primera capa de bizcocho. Puedes montar la tarta así y retirar el exceso de crema al final, simplemente tirando de los trozos con cuidado. El plato quedará limpio.

Onnea!

“Onnea” means congratulations in Finnish; today's cake has a dedication and is, probably, the most deserved of all.

Not just because that person is the reason that I live in Cardamomland, or because he suffers me every single day and night; also because he's an important part of this blog and the one who pushed me (and believe me, Finnish stubbornness can have no limits) to start it.

In Finland the tradition is to eat strawberry and cream cake in birthday parties; every year they seem to be very similar, or the same, and even though they are delicious, I wanted to prepare something different but not to break completely with the traditional cake. So strawberries met blueberries and raspberries (we have a lot of them these days and they are deadly luscious!), cream made a deal with mascarpone and the cake found cacao powder, what is never a bad a idea.

Triple berry mascarpone cake


Ingredients (serves 10):

For the cake:

6 eggs
200 g caster sugar
200 g plain flour
3 tbsp cacao powder
1 pinch of salt

For the filling and the cover:

500 ml whipping cream
500 g mascarpone
2 tbsp icing sugar
1 tbsp vanilla essence
80 g strawberries (and some more for decoration)
80 g raspberries (and some more for decoration)
80 g blueberries (and some more for decoration)

Modus operandi:

1. Preheat the oven to 180 C.

2. Whisk the eggs with the caster sugar until they double their size and they are pale and fluffy. Then add the flour, mixed with the cacao powder and the salt, little by little, mixing very carefully.

3. Prepare 2 baking trays with baking paper and pour half of the batter on each one. Spread the batter until you get a very thin square on each tray and bake for around 10 minutes. Take the cakes out of the oven and let them cool down for a while. Remove the baking paper and let them cool completely.

4. Whip the cream in a big bowl. When it's well whipped, add the mascarpone, icing sugar and vanilla essence and whip properly again.

5. Take 450 g of this cream mix and divide it in 3 bowls (150 g on each). Add blueberries to one, chopped strawberries to another one and raspberries to the last one (depending on the size you can put the whole raspberries or break them a bit with your fingers). Mix well the three combinations and reserve.

6. Cut eat cake in 2 pieces and put the rectangles one on another. Then make some cuts on the edges to get 4 identical cakes.

7. Place the first cake in the final plate, add the blueberry layer and put a second cake on top. Then add the raspberry layer and place another cake on top. Finally add the strawberries layer and end up with the last cake on top. Cover the cake with the mascarpone mix and level the cake helping yourself with a big spatula.

8. Decorate with some more strawberries, raspberries and blueberries and reserve the cake in the fridge a couple of hours before serving.

*To avoid getting the final plate dirty you can place pieces of aluminum foil between the plate and the first cake. You can build the cake and remove the extra cream away at the end, just pulling the pieces out carefully. The plate will be still clean.

Hockey sobre hielo y fresillas (green salad with strawberries and mozzarella in carrozza)

¡Hola, hola! Estoy de vuelta después de otra semanita infernal, porque la cosa no terminó en Vappu, no. Luego llegaron... ¡los mundiales de hockey sobre hielo! Total, más fiesta y pirriaque y lo que queda por venir.

Lo bueno es que está haciendo un tiempo estupendo, demasiado diría yo, porque a las 6 de la mañana ya no hay quien duerma con ese solano que se filtra por las venecianas.

En fin, las fresillas van haciendo su aparición estelar, no las finlandesas, que para eso todavía quedan unas cuantas semanas, pero sí las españolas, y no les vamos a hacer el feo, ¿no?

Ensalada verde con fresas y mozzarella in carrozza

Ingredientes (para 2 personas):

Para la ensalada:

100 grs de mezcla de brotes
Un puñado de fresas
1 cucharada de pipas de calabaza peladas

Para la mozzarella in carrozza:

4 rebanadas de pan de molde sin corteza
1 bola de mozzarella de búfala
1 huevo
30 ml de leche
Harina de trigo
Sal
Pimienta negra molida
Aceite de oliva

Para la vinagreta:

4 fresas pequeñas
100 ml de aceite de oliva
30 ml de vinagre balsámico o de manzana
1 cucharadita de azúcar

Modus operandi:

1. Limpia las fresas de la vinagreta, trocéalas y disponlas en el vaso de la batidora. Tritúralas junto con el aceite, el vinagre y el azúcar. Reserva.

2. Por otro lado, corta la mozzarella en rodajas y prepara dos sandwiches con ellas. Corta cada sandwich en 4 porciones. Bate el huevo y mézclalo con la leche y una pizca de sal y pimienta. Reboza cada porción de sandwich primero en harina y luego en la mezcla de huevo y leche y fríelas en abundante aceite bien caliente. Sácalas sobre un papel absorbente para retirar el exceso de aceite.

3. Dispón los brotes y las fresas limpias y picadas en el plato de presentación, coloca la mozzarella in carrozza sobre los brotes, aliña con la vinagreta y termina añadiendo las pipas de calabaza.

Ice hockey and strawberries

Hello, hello! I'm back after another infernal week, because the party didn't end with Vappu... the Ice Hockey World Championship started! So, more party and alcohol, and whatever that is still coming.

The good thing is that we are having an unbelievably good weather, too good in my opinion, because at 6 in the morning I can't sleep anymore with all that sun coming through the windows.

So strawberries are finally appearing, not Finnish (we still have to wait some weeks more) but Spanish ones, and discrimination is an ugly thing, isn't it?

I hope you like it!

Green salad with strawberries and mozzarella in carrozza

Ingredients (serves 2):

For the salad:

100 g herb salad mix
A handful of strawberries
1 tbsp shelled pumpkin seeds

For the mozzarella in carrozza:

4 slices of bread, crust removed
1 ball of mozzarella di bufala
1 egg
30 ml milk
Plain flour
Salt
Grinded black pepper
Olive oil

For the vinaigrette:

4 small strawberries
100 ml olive oil
30 ml balsamic or apple cider vinegar
1 tsp of sugar

Modus operandi:

1. Clean the strawberries for the vinaigrette, chop them and put them in the blender jar. Blend them together with the oil, the vinegar and the sugar.

2. Slice the mozzarella and prepare 2 sandwiches with it. Cut each sandwich into 4 portions. Beat the egg and mix it with the milk and a pinch of salt and pepper. Coat each portion in flour and then in the mix of egg and milk, and deep fry them in plenty of hot oil. Place them on a kitchen paper to remove the extra oil.

3. Place the herb mix and the strawberries (clean and chopped) on a dish, put the mozzarella in carrozza on them, season with the vinaigrette and finish adding some pumpkin seeds.

Otra de dulces típicos (laskiaispulla)

Ya os comenté en la entrada de los runebergintortut que rara es la fiesta en Finlandia que no se celebra poniéndose uno tibio con alguna cosa rica. Hoy es Laskiainen, una fiesta cristiana asociada a la Semana Santa que se celebra el martes anterior al Miércoles de Ceniza. Y no es que sea muy devota yo, pero cuando se trata de llenar la tripa no hay religiones que valgan.

Para celebrarlo, podemos ponernos morados de laskiaispullat (bollos de Laskiainen). La laskiaispulla es un bollo de cardamomo (vaya novedad, ¿no?) que se rellena con nata y mermelada de fresa o una crema-mazapán de almendras. Aquí os dejo mi versión con mermelada casera, pero por supuesto este paso lo podéis evitar con una visita al supermercado (no hay color, pero aceptamos barco). En Finlandia existe la costumbre de congelar fresas silvestres en verano para poder usarlas en pastelería en invierno así que la receta de hoy va con fresas congeladas, pero podéis sustituirlas por fresas frescas añadiendo un poco de agua.

Laskiaispulla

Ingredientes (para 12 laskiaispullat):

Para los bollos:

450 – 500 grs. de harina de trigo

250 ml de leche templada

100 grs. de mantequilla en pomada

100 grs. de azúcar blanquilla

25 grs. de levadura fresca

2 huevos

1 cucharadita de cardamomo

1 pizca de sal

Azúcar glass

Para la mermelada:

500 grs. de fresas congeladas (limpias)

250 grs. de azúcar blanquilla

El zumo de medio limón

Para la nata montada:

400 ml de nata para montar

2 cucharadas de azúcar blanquilla

1 cucharadita de esencia de vainilla

Modus operandi:

*Para la mermelada casera: pon las fresas congeladas en un bol y mételas en el microondas durante 3 minutos (sáltate este paso si utilizas fresas frescas). Añade el azúcar y el zumo de limón y tritúralo todo junto (puedes dejar algunos trocitos más enteros para que la mermelada tenga otra textura). Pon la mezcla a fuego medio en una olla pequeña durante 1 hora. Deja enfriar mientras preparas los bollos.

1. Vierte la leche en un bol y añade la levadura, desmenuzándola con las manos. Agita con unas varillas hasta que la levadura se haya disuelto en la leche. Añade el azúcar, la sal, el cardamomo y un huevo. Remueve de nuevo para que se integren bien los ingredientes.

2. Añade la mitad de la harina, mezcla con ayuda de una espátula y agrega la mantequilla cortada en subitos. Mezcla bien hasta que la mantequilla se haya integrado completamente en la masa; entonces añade el resto de la harina y amasa hasta conseguir una masa suave y elástica. Coloca la masa en un bol y déjala levar tapada con un paño durante 1 hora o hasta que doble su volumen.

3. Elimina las burbujas de aire que se hayan formado en el interior con un ligero amasado. Haz 12 bolas con la masa y distribúyelas en una bandeja de horno con papel vegetal. Tápalas con un paño y déjalas levar durante 30 minutos.

4. Precalienta el horno a 200 C.

5. Bate el otro huevo y pinta con él los bollos (en este momento puedes añadir algunas almendras fileteadas). Hornea a 200 C durante 12 minutos. Deja enfriar los bollos sobre una rejilla.

6. Monta la nata con el azúcar y la esencia de vainilla ayudándote de una batidora de varillas. Coloca la nata montada en una manga pastelera.

7. Corta la parte superior de los bollos. Unta el interior con mermelada de fresa y dibuja un aro alrededor con nata montada. Cierra los bollos y decora con azúcar glass.

One more typical bun

I already told you in the post of runebergintortut that usually public holidays in Finland are somehow connected with some sweet product. Today is Laskiainen (Shrove Tuesday), a Christian celebration related to Easter, and I’m not believer but if we are talking about filling my belly with good stuff, then let’s celebrate!

These days you can eat a lot of laskiaispullat (Laskiainen buns). Laskiaispulla is a cardamom bun (what a surprise, huh?) filled with whipped cream and strawberry jam or almond marzipan cream. Here you have my version with homemade jam but of course you can skip this step with a quick visit to supermarket (it’s not the same, but good anyway). In Finland, people usually freeze fresh wild strawberries in summer, so they can use them for baking in winter. That’s why this recipe is made with frozen strawberries, but you can change them for fresh ones just adding a bit of water.

Let’s go!

Laskiaispulla

Ingredients (makes 12):

For the buns:

450 – 500 g plain flour

250 ml lukewarm milk

100 g butter, softened

100 g caster sugar

25 g fresh yeast

2 eggs

1 tsp cardamom

1 pinch of salt

Icing sugar

For the jam:

500 g clean frozen strawberries

250 g caster sugar

The juice of half a lemon

For the whipped cream:

400 ml heavy cream

2 tbsp caster sugar

1 tsp vanilla essence

Modus operandi:

*For the homemade jam: place the frozen strawberries in a bowl and heat them in the microwave for 3 minutes (skip this step if you are using fresh strawberries). Add the sugar and the lemon juice and blend everything together (you can leave some bigger pieces of fruit so the jam has a different texture). Pour the mixture into a little pot and cook at medium heat for 1 hour. Let it cool down while you bake the buns.

1. Pour the milk into a bowl and add the yeast, crumbling it with your hands. Whisk until the yeast is dissolved in the milk. Add the sugar, salt, cardamom and one egg. Whisk again so the ingredients get well mixed.

2. Add half of the flour, mix with a spatula and add the butter, diced. Mix until the butter has completely blended with the dough; then add the rest of the flour and knead to get a smooth and elastic dough. Place it in a bowl, cover with a tea towel and leave to prove for 1 hour, or until it doubles its size.

3. Knead a little bit to remove the air bubbles inside the dough. Divide the dough in 12 balls and place them on a baking tray prepared with baking paper. Cover them with a tea towel and leave to prove for 30 minutes.

4. Preheat the oven to 200 C.

5. Whisk the other egg and paint the buns with it (in this step you can also add some almond flakes). Bake at 200 C for 12 minutes. Let the buns cool down on a wire rack.

6. Whip the cream with the sugar and the vanilla essence, using an electric mixer. Place the whipped cream in a piping bag.

7. Cut the upper part of the buns. Spread some strawberry jam inside and draw a ring around with whipping cream. Close the buns and decorate with icing sugar.
